Stovetop Shakshuka

Shake things up with Shakshuka

Shake things up with Shakshuka—a quick and easy stovetop recipe great for any time of day.

Ingredients:

  • 2-4 tbsp oil (olive, grapeseed, high heat blend all work great) 
  • 1 yellow onion (sliced) 
  • 5 cloves garlic (sliced) 
  • 1 tsp cumin 
  • 1 tsp smoked paprika 
  • ¼ tsp red pepper flakes 
  • 1-28oz can whole peeled tomatoes (salt & pepper to taste)
  • 5-7 large eggs 
  • Herb Blend (¼ cup fresh cilantro, ¼ cup fresh parsley - both chopped) 
  • 3-4oz crumbled feta cheese 
  • To serve: Crusty Bread, Avocado, Pita

Directions:

  1. Place a heavy sautee pan on the stove and turn heat to medium.
  2. Put oil in pan and let heat up.
  3. Put onions into pan and cook until soft and slightly brown.
  4. Put garlic into pan and cook for about 1 minute.
  5. Add cumin, smoked paprika & chili flakes to pan, cook for 30 seconds to 1 minute, until fragrant.
  6. Turn down heat & add can of tomatoes. 
  7. Chop tomatoes up with spoon or spatula until a sauce is formed. 
  8. Make enough wells for the eggs. Crack eggs into each well.
  9. Cover the pan and turn heat back up to medium, cook for about 10 minutes or until eggs are set.
  10. Remove from heat, top with chopped herbs & feta cheese (if desired).
  11. Serve with your favorite sides and enjoy!
